Baingan Masala Sabzi
| Baingan Ki Sabzi

Eggplant or brinjal is called baingan in hindi. This version of Eggplant masala sabji is dry item. We can enjoy it with roti, chapathi or naan. It can be prepared instantly. There are several ways to make baigan ki sabji but this is my personal favorite method. Here we can replace eggplant with either cauliflower, ladies finger(okra) or potato. Please follow the recipe instruction along with photos provided for reference.

PREP TIME: 15 MINUTES

COOK TIME: 25 MINUTES

TOTAL TIME: 40 MINUTES

Ingredients:

5-6 small size eggplant,
1/2 tsp of cumin seeds,
1 large onion finely chopped,
2 chopped green chilly,
5-7 curry leaves,
1/4 tsp of turmeric powder,
1 tsp of coriander powder,
1 tsp of ginger garlic paste,
2 big tomatoes chopped,
3/4 cup of curd,
1/2 tsp of garam masala,
Coriander leaves for garnishing,
Salt as per the taste,
Oil for frying.

Method:

Clean the brinjal and cut then into small cubes.

Fry them till they turn slightly translucent and drain them using kitchen tissue and keep it aside.

Heat some oil Then add mustard seeds when mustard starts spluttering add cumin seeds

Now add onion and salute for a min

Also add green chilies, curry leaves and ginger garlic paste. saute till raw smell goes,

Add coriander powder and red chilly powder,

Add salt as per required and mix well

Now add chopped tomatoes and close the lid and cook for 10 mins in low flame,

When tomato melts add previously fried eggplant and also add curd

Cook till the baigan cooks well and releases oil then add garam masala and sprinkle some coriander leaves,

BAINGAN MASALA SABZI is ready to eat. Serve it with roti ,chapati or parotta
